The cheese is cubed, bread slices are dunked into wine, and the mixture is then heated in a pot over a slow flame using a wood fire. In versions of the dish that do not use wine, white wine or vermouth is added to the fondue after it has been cooked. The taste of the fondue savoyarde remains unchanged regardless of whether it uses red or white wine.
When cooking this dish, remember that all ingredients should be at room temperature prior to adding them to the pot.

Is fondue French?
In many countries, the word “fondue” has become synonymous with “fondue.” In France, however, the term “fondue” is used for only one particular type of dish. The dish is called fondue savoyarde in French. However, be careful not to confuse this recipe with a similar French fondue recipe made from Gruyère cheese.

The combination of wine and pre-prepared cheese is an excellent method to ease the digestive system, clear the nasal passages and clear oily and sticky porridge. You can use any type of cheese, but we recommend fondue Savoyard or Brie that has been smoked over alder branches.

A delicious and fresh fondue savoyarde can be made by using the following ingredients:

– 400 g cheese of 4 members (preferably Brie or Savoyard, smoked over alder branches)
– 2 tbsp white wine (preferably Val de Travers) – 8 g pre-prepared salt (non-iodized table salt or dixié salt) – 1 stick celery – 3 slices white bread – 100 g chocolate chips  (3.5 ounces) – 100 g white chocolate chips  (3.5 ounces) – Bitter chocolate (optional, see below) – Rum (optional, see below)
Pour the wine in a large pot. Add the cheese and heat over low to medium heat until the cheese begins to melt. Stir with a wooden spoon until smooth, then add salt. Cut the celery into strips, dip them into salty water and squeeze well. Add them to the cheese and stir again.
