To maintain your cast iron cookware, all you need is oil or shortening, which will help in preventing the food from sticking on to the pan. If you’re looking to buy a cast iron pan that won’t scratch and can last a long time, i.e. around 40-50 years, then go for an old fashioned heavy skillet that you could find at flea markets. The only problem is that they are usually very heavy and you’ll need to be careful when transferring them from the hot stove to the cooler marble countertops.
On the other hand, a really good stainless steel pan will last for 10+ years in normal usage unless it’s damaged through use or abuse (dropped on floor for instance). So why not go for a basic 10″ Stainless steel pan? It’s affordable, light weight and very easy to clean.
