How do I keep my baking pan from warping
To help stop your baking sheet from warping in the oven, cover the pan’s entire surface with food as uniformly as possible, and heat the pan slowly and gradually rather than abruptly.

Baking pans are usually made of aluminum or steel. Aluminum pans tend to warp more than steel pans, so buy a heavier baking sheet if warping is a specific problem for you.

You can also line your baking pan with parchment to help prevent it from warping. Parchment paper has a coating that allows the paper to release easily from the food once it’s ready to be taken out of the oven.

You might want to try a material other than plain steel. Pans made out of silicone or copper are nonstick and tend not to warp as easily as the traditional metal baking pan.

The material can also impact how evenly your cake bakes, depending on the type of heat transfer involved. Copper heats up instantly, for instance, whereas other materials may take longer to reach the same temperature.

Why does my tray bend in the oven
Baking sheets bend in the oven because of high temperature. Baking sheets and pans are made from multiple layers of metal. When the oven heats up, the metal reacts to the heat and begins to expand.
In the case of your metal baking sheets and pans, multiple surfaces need to expand — the bottom of the pan or sheet and the four raised edges along its perimeter. As they heat up, they don’t all expand at the same rate. The bottom will expand slightly more than the raised lip. This creates stress at the folded edges.

Even if your sheet pan is made from non-warping material like stainless steel, it will still bend if you put too much weight on it. The flimsier the felt, the more likely your sheet pan will bend in the oven.

Handling and loading
Use only light-weight bakeware when possible. Also, make sure to evenly distribute the weight on your baking sheets.

Only use baking sheets and baking pans that have handles. Overheating the pan can cause hot spots, making it unsafe to lift the sheet when partially baked.

Do not wash your sheet pan in water; hand-washing is sufficient. This can cause scratches on the surface of your pan or racks, which will damage their non-stick coating. If a difficult to remove food has stuck to it, try using dishwashing liquid (even if it’s in a spray form).

How to choose bakeware that doesn’t warp
Select pans made of non-reactive materials like stainless steel, enameled cast iron, or silicone. These are less likely to warp and can tolerate high temperatures better.

If possible, choose baking racks that have a handle to prevent burns when moving the pan in and out of the oven. This also prevents your hands from directly coming into contact with the hot pan or rack when inserting or removing it from an oven.
